PHILLY THE TART - DRY-HOPPED SOUR
Brewed in collaboration with Lallemand Yeast Co. , Philly the Tart is a unique sour beer brewed with a newly isolated strain of yeast which naturally produces lactic acid as well as alcohol, giving this beer its pleasant tartness. While conventional sour beers require the use of bacteria to produce acidity, this new experimental yeast isolated from a tree in Philadelphia is able to do it all itself, while also contributing aromas and flavours of peach and other stone fruits. A generous dryhop of Citra, Mosaic and Centennial hops give Philly a bright passionfruit and grapefruit character, and the wheat malt and oats result in a soft mouthfeel making Philly the Tart a flavourful and refreshing beer.
