Whether you call it Mardi Gras, Fat Tuesday, Shrove Tuesday, or Pancake Day, these pancakes are a great way to use up leftover beer. We suggest either Jongleur Wit or Blackmail Milk Stout, but anything with more malt presence than hops should do the trick.
1 cup flour
1/4 cup sugar*
1 tsp baking powder
1/2 tsp kosher salt
1 beaten egg
1 cup beer**
2 TBSP melted butter/oil
* white sugar if using Wit or brown sugar if using Blackmail
** Jongleur Wit or Blackmail Milk Stout
In a large bowl, whisk together flour, sugar, baking powder and salt. Add the egg, beer, and butter and gently whisk in to make a smooth batter. Heat griddle/pan over medium heat and brush with oil. When griddle is hot, spoon on pancakes and cook until bubbles appear on the surface. Flip and cook on the other side till golden brown. Serve with butter and maple syrup and a glass of beer on the side.
